Recipe: Caramel Mountain Frosting
Okay, so we decided to make one of the cake mixes we’ve had around for awhile. Trouble was, we had no frosting, or powdered sugar, or whip cream, or corn syrup. So we couldn’t make regular frosting or White Mountain frosting (which is a whipped egg-white based frosting, and VERY good). So my creative juices started to flow. We DID have brown sugar. And what goes better with brown sugar syrup than peanut butter? Hmmmmm… So I invented… (drumroll please) Caramel Mountain Frosting 1 cup firmly packed brown sugar 1/4 cup water 1 cup peanut butter 2 eggs 1 tsp vanilla Mix brown sugar and water in a saucepan and bring to a boil. Boil for 5-10 minutes. While that’s boiling, separate eggs – give yolks to the dog (or whatever you want to do with them). Whip whites to stiff peaks. {Comfort food}
Like most other parts of the country, this past week here in South Texas has been cold and rainy. I don’t necessarily mind it being cold or even if it is a bit rainy {as long as it doesn’t last long}, but I really detest having them both hit at the same time. Not only does it make for pretty miserable weather, it wreaks havoc on the body. The hubby had been sick the week of New Years and the following week. He was finally feeling better this week, then Little Man became ill. We were up most of the night Tuesday and Wednesday night with him battling a terrible cough and then by Thursday afternoon, a high fever kicked in. Isn’t it heartbreaking as a parent when your child is sick?? Finally by Friday, it was obvious it was time to get him in to see the doctor. I must admit, I dreaded the visit because ever since he had to go to the ER last summer, it’s always a scary event for Little Man to have to see a doctor. It is the room that is used more often than any other space. I love, love, love it...{and as a side note—I must give a shout out and many heartfelt thanks to the previous owners of our home who remodeled and designed this delightful space–they had the vision and put in the man hours to transform a 1950′s kitchen to a more modern, old world style.} And I must say….because I love this space so much, it continues to motivate me to do more cooking, baking and well, other “domestic mama” stuff in the kitchen. Baba’s Backseat Chocolate Chip Cookies
I’m no food blogger, but I enjoy cooking, and I rarely follow recipes. So when I got a sweet-tooth for chocolate chip cookies today, I decided to do a little experiment. First I Googled ideas for making your chocolate chip cookies better, and there were all kinds of things. I took notes. Then I looked at three or four different recipes to get an idea of proper quantities – then I went to work, with Lunch Bucket as co-cook. The result? Baba’s Backseat Chocolate Chip Cookies. (the backseat thing is a sort of inside joke, which I’ll have to explain some other time.) They came out great! Anyway, here’s the recipe! Enjoy! Green Jell-O Pineapple Rings
Paul spends a portion of his time constructing arc-welders from microwaves and making green Jell-O treats. Jell-O pineapple rings are easy to make: Empty juice from a can of pineapple rings. Mix the Jell-O (use green if you live in Utah), substituting juice for water. Use the can as a mold, moving the pineapple rings around to allow the Jell-O to get in between. When set, open the remaining end of the can and push the Jello-O and rings out onto a plate. Slice between the rings. Jell-O is the official state snack food of Utah and Utahns have the highest per capita consumption of Jell-O in the world. My Chili Recipe
Now, when I started this blog, it was never meant to be a recipe exchange blog. However, once in a while I come up with something super yummy, and just HAVE to share. This is one of those days! Here is a little background for this recipe: I have been to several chili cookouts in my lifetime, and the cook side of me can’t help but think with every bite, “I would have added this” or “I wouldn’t have put this in and changed this…” but the whole time never having the desire to try it. So, this rainy season I decided that I was going to make up my own yummy tummy chili recipe and it was going to be like none other (that I know of) so here it is! Food Storage – It’s In the Bag
I purchased a useful little book last week called It’s In the Bag by Michelle and Trent Snow. Michelle is affectionately called “The Bag Lady” because of her Bag Meal System. The book is well laid out with easy to follow instructions. Over a hundred recipes extend its usefulness for as long as you need to store food. The system is simple. I put everything I need for a meal in a bag. As I read through the first chapter it really does turn out to be simple — even a man could do it. Michelle guided me through 12 advantages of Bag Meals from “having organised meals ready” to “an easy way to rotate my food storage.” There are photographs too for the folks that never read the instructions but want to get moving. The bulk of the book is taken up with bags of recipes — or perhaps recipes for bags? Now in my home I hardly ever cook and when I do it is beans on toast (now that wouldn’t need a very big bag).
